Do we like Schnitz?

Fast-casual schnitzel franchise (chicken schnitzels, wraps, burgers), based in Melbourne, Australia.

Our score: 6 out of 10. A growing Aussie family-founded chain with no scandals in our searches. We'd back it mildly, but we found little on how it treats workers, franchisees and the environment.

Schnitz began in 2007 in Melbourne. Polish-born schnitzel cook Roman Dyduk opened the first store with his sons Tom and Andrew, who still run the business, according to top4.com.au.

It calls itself Australia's first specialist schnitzel franchise. It says its chicken is Australian and RSPCA approved, and that the schnitzels are pan-cooked rather than deep-fried. Those are the company's own statements.

The chain has grown to roughly 80 restaurants, according to 2025 franchise trade reporting. Franchisees have opened new sites, including a South Australian flagship at Tea Tree Plaza.

There has been some leadership churn. Brenton Howie left as CEO in March 2025, and San Churro's Kerri Wane was named as the replacement. We found no scandals, but also little independent scrutiny, so we score it a cautious 6.
